Washington, D.C. — Maryland — Virginia. Where the tree was planted. Breadfruit Academy has been operating here since 2022, and over thirty graduates — some who began as dishwashers — now work as bakers, pastry chefs, and culinary professionals across the region.

Manhattan, Brooklyn, the Hudson Valley. The grove of relentless service — the city that taught the modern American kitchen what pressure looks like. French houses on the Upper East Side, omakase counters in the Village, fire-driven Italian on the Lower East Side, the new wave in Brooklyn and Queens.

Chicago
The Grove of Chicago
The Loop, Logan Square, Pilsen, the West Loop. The grove of unsentimental craft — a city that built a generation of the country’s most precise kitchens without anyone asking it to. Tasting menus that defined an era. Italian beef, taqueria, fine dining — held to the same bar.

The Grove of Los Angeles
Highland Park to Santa Monica, Koreatown to the harbor. The grove where the borders of the craft are being redrawn — Mexican, Korean, Japanese, Salvadoran, the new American hybrid kitchens. Fire is reinvented every season.

We are not in a rush. Each grove takes time to plant correctly — a small founding cohort of stewards, vetted in person, willing to teach the way they were taught. We are going through the United States city by city before we cross any ocean.

If you are a master in a city we have not named, write to us. Some groves will be planted because the right master volunteered to plant them.
A grove is a city. A city has more than one craft. The kitchen is where we are starting, because that is where the founder cooks and where the bleed is loudest. But the model does not end at the kitchen door.
Every grove will, in time, hold masters from every craft economy that depends on a master teaching the next one — electrical, HVAC, plumbing, welding, masonry, woodworking, tailoring, automotive, barbering, and the rest. Same model. Same covenant. Different fires.
